Meet Marefold
Simon and Nic of Marefold Private Catering bring a wealth of culinary experience to Bruny Island, with Simon at the helm in the kitchen. An acclaimed private chef, Simon has cooked aboard superyachts and at private estates around the world, and is now the curator and chef behind ECHO, one of Tasmania’s most loved food and art festivals. His work has also featured in national media such as Qantas Magazine, Australian Traveller and Gardening Australia.
Together, Simon and Nic share a deep appreciation for exceptional food and Bruny Island’s remarkable seasonal produce. Working closely with local growers and makers, they bring a thoughtful, creative approach to showcasing the best of Tasmania. VIPP TUNNEL, TASMANIA
Set along the shores of the D’Entrecasteaux Channel, Vipp Tunnel is a striking architectural retreat where considered design meets the raw beauty of Bruny Island. Its sculptural concrete interiors, minimalist Danish furnishings and expansive windows frame beautiful water views, while a glass lightwell brings shifting colour and natural light into the space throughout the day.

Shearer’s Quarters at Historic Waterview
Set on a working sheep farm on North Bruny Island, Waterview is a remarkable coastal property with sweeping views across Storm Bay, private beaches and six kilometres of coastline. Home to the award-winning Shearers Quarters designed by acclaimed Australian architect John Wardle, the property brings together thoughtful architecture, rugged natural beauty and a strong connection to the surrounding landscape.

Mabel’s Lookout
Set above the D’Entrecasteaux Channel on North Bruny, Mabel’s Lookout is a contemporary private retreat with expansive water views and a strong connection to its natural surroundings. Accommodating groups of up to eight, it’s a beautiful setting for a private lunch with family or friends.
As a featured venue partner, Mabel’s also offers the option of a post-lunch sauna session, giving guests a chance to unwind and enjoy the views before continuing their Bruny Island adventure.

We're Cameron and Lezli Burgess, full-time Bruny Island residents, raising our family here and embracing everything that comes with island life. We personally host our experiences, sharing the places we love, the people we've come to know and the local connections that make a day on Bruny so special.
Over the years, we've built friendships across the island and come to know the people, produce and places that visitors might otherwise miss. It's these relationships, along with our love of sharing Bruny with others, that allow us to create experiences that feel personal, considered and connected to the place we call home.
